Dried Grape Production Process

The fruit is cane pruned or harvested at ripening when sugar levels are between 18-22 brix. We let it dry naturally under the warm summer sun at 35-40 degrees Celsius. The drying process may take several weeks depending on the size of the fruit. We carefully monitor the moisture content in the grapes, until the average berry reaches 15% moisture, the Cluster harvest will begin.

For loose dried grapes varieties, harvest will start at 12-13% moisture. We harvest loose grapes mechanically using a harvester to shake and beat the berries off the vines. It will then get transported to a packing house, before washing, the fruit will go through a de-stemmer machine that flick out any sticks/stems that are still stuck on to the berries.

For cluster, to avoid mechanical damages to the berry. Qualified bunches will be handpicked and carted into our packing shed. We ensure cleanliness and hygiene in the production process. Here the product will be hand washed, air dried and hand packed into the box by our experienced packers. The finished product will be stored in a cool dry place that is a dust free environment, ready to send to the market. At 0c degree storage, it will have a shelf life of about 2 years.

With a soft and tender texture, the sweet natural taste and distinctive flavours that come from each different variety make our products irresistible!
